Sometimes smoothies seem like a summer thing; but if you use seasonal fruits and vegetables you can drink smoothies all year round. I love pumpkin everything, but at some point in the Fall I get a little pumpkin’d out but still want to indulge in yummy festive Fall flavors. This smoothie is a delicious and nutritious Autumn breakfast or snack. I like to freeze the ingredients ahead of time in a container and blend with the nut milk and ice in the morning for a quick and easy breakfast.
*Makes 2 servings
2 C cooked and peeled sweet potato
1/2 C raw walnuts
6 pitted dates
2 tsp cinnamon
1 tsp turmeric
1/2 tsp nutmeg
1 C vegan milk (I used flax milk)
1 C crushed ice
Blend all ingredients together in blender until smooth then enjoy!
*optional- sprinkle more spices and/or walnuts on top for extra flavor and texture
