No-Bake Chocolate Chip Power Balls

These scrumptious little raw treats are easy to make and so convenient to have around. They are perfect for post-workout recovery or breakfast on-the-go since they are packed with healthy carbs and protein.


*makes about 10 balls

1 1/2 C gluten free old fashioned oats (dry)

2 T chia seeds

1/2 C shredded coconut

1/2 C natural peanut butter

4 T maple syrup

2 tsp vanilla extract

1/2 C dark chocolate morsels (I use the Enjoy Life brandĀ

4 T water


-In a small bowl, soak chia seeds in water and set aside

-Mix oats, coconut, peanut butter, maple syrup, and vanilla in a large bowl

-Chia seeds should now resemble a jelly-like substance. Mix the chia jelly with the rest of ingredients until all ingredients are blended evenly

-gradually mix in chocolate morsels thenĀ cover mixture and store in refrigerator for at least 10 minutes

-remove from refrigerator and form into about 1 inch balls (or any shape you like– they will work as cookies or bars as well)
